Roland's Artichoke Bottoms are of a special variety which ensures the firmness, color, and quality required for a successful presentation. Our largest size 5/7 may be hand cut to size. Remove from brine and rinse briefly with cold water. They can be used with whole eggs, seafood pates or mousse, to present a filet or even escargot.
