The 3-Piece airlock is the best choice for the primary fermenter, since it comes apart for easy cleaning in the event of a blow-off.
Fill to the line with boiled water or sanitizer to create a closed fermenting system that allows CO2 to escape, but does not allow air back in to contaminate your beer or wine. The pressure from the fermenting vegetables, wine or beer, causes the center cup piece to move up and down allowing gasses to escape.
