Dandelion (Taraxacum officinale) - Many consider Dandelions to be annoying weeds, but there are many uses for these hardy little perennials. Used considerably in the kitchen, Dandelion herbs are cultivated with tender, fleshy, dark green leaves. This leaves can be used as a green vegetable for boiling or in a salad. Roots can be used as a substitute for coffee by roasting in an oven until crisp and then grinding. Dandelion flowers are used for wine making. Dandelion herbs have many uses and are easily grown from herb seeds. Start the seeds directly outside with plenty of moisture, and in a sunny exposure. The herb plants will form a thick, long, tap root, dark brown outside, white and milky white inside, grow long jaggedly toothed leaves, shiny, dark to light green and growing in the shape of a rosette close to the ground. When mature the dandelion herb seed in the flowers heads are round and fuzzy, carried by the wind to be germinated where ever they land.
