Fennel Pollen is often compared to Saffron due to their labor -intensive gathering as well as their very distinctive flavors. The Fennel pollen from Casina Rossa is gathered in Italy, usually in August. Then allowed to dry in the sun until it is deemed ready by an experienced producer.
