The organic dates in this delectable syrup were sun dried on palm trees deep in the Coachella desert. The fruit from this arid climate result in a golden brown nectar with notes of rich butterscotch that you might want to eat on... everything. What is the difference between California Date Syrup and the Date Lady Original Date Syrup? The California syrup is made with dates grown in the California Coachella desert, and the original with dates from Tunisia. The different environments and growing conditions attribute to each a uniquely different flavor profile and color. We would describe the California syrup as having more of a butterscotch note and the imported syrup, as being more reminiscent of brown sugar. The California syrup is also a bit thinner in viscosity which can be explained by a slower production process where the pectin is broken down further. Think of it this way; when making jam, you add pectin to thicken the mixture. When making the California syrup, the naturally occurring pectin is broken down, making it less viscous.
