Description

Ali Mountain (Alishan) is famous for its high-mountain oolong tea. The high mountain conditions offer plenty of fog and low temperatures which are ideal for oolong tea, and the water used for irrigation is from pure mountain springs. These tea plants grow slowly in the high mountains at altitudes of 1450 meters or above, producing lightly oxidized oolong teas. Jin-Xuan is a special variety of Camellia Sinesis (tea plant), which is masterfully hand processed and finished to excellence with a hint of perfume. Developed through research at the Taiwan Tea Agricultural Research centre, this special variety is known for producing an Oolong which is characterized by its sweet fragrance with overtones of flowers and fruits. The tea is light yellow-green in colour with a faintly sweet smooth taste. It has a wonderfully creamy texture and rich taste with a delicate floral aroma. This great tea is the product of growing one of the best varieties (Jin Xuan) in one of the best location for growing tea. 1 rounded teaspoon of whole leaf tea per cup. Steep tea for 2-3 minutes at 175F. To bring the kettle down to 175F take off the heat approximately 5 minutes. Milk or sugar will mask the delicate characters of this tea and are not recommended.
